Ingredients:
- 6 large sweet potatoes
- 1 stick of butter
- 1 C. brown sugar
- 1 C. sugar
- 5 eggs
- 1 ¼ C. cream
- 2 t. vanilla extract
- 1 t. cinnamon
- ¼ t. salt
- 1 bag of marshmallows (large or small)
Directions:
- Preheat oven to 350 degrees
- Bake the sweet potatoes for 1 ½ hours
- Peel the potatoes and place in a large
mixing bowl
- Mash the potatoes
- Add all the remaining ingredients to
the bowl and mix well
- Using an electric mixer, beat the
potatoes until they are fluffy
- Transfer the mixture into a large baking
dish
- Bake for 25 minutes
- Remove the casserole from the oven and place
the marshmallows over the potatoes
- Return to the oven bake until the
marshmallows turn light brown
- Serve warm
Tips
and Tricks:
- Sweet potatoes can be stringy close to
the peel. I usually cut the
potatoes in half and scoop the potatoes out of the peel.
- You can use any kind of cream (heavy,
whipping, half and half, evaporated milk) whatever you have on hand.
- If you are making this for a special occasion, you can prepare this ahead of time, but wait to bake it the day it is to be served.
